Carrot Pudding | Agar Agar
An unusual pudding with carrots in it. We have had carrot halwa its a famous after food dessert in India. But, here I am showing you how to make a pudding that is just as tasty as halwa and its simple to make too. It’s very simple. It contains milk but you can also make it dairy free. I'll explain how as we go on.
2 large carrots
2 cups of milk or Coconut milk or Almond milk
A pinch of salt
Sugar ½ cup
Milk powder ½ cup (optional)
Agar agar powder 1.5 tsp. or 3 Tbsp of Corn Flour.
1 Tbsp butter (optional)
1 ½ tsp vanilla extract
Chop the carrots in fine slices.
bring milk to boil add in the sliced carrots and a pinch of salt. boil over low flame until the carrots are cooked and soft.
Remove from the heat. Let it cool to room temperature.
Now add the carrot milk mixture into a blender
Blend until you get a smooth consistency
In a saucepan pour the blended mixture.
Add in the sugar, milk powder.
Mix it in really well. The mixture will be quite thick.
Add in the Agar Agar powder and vanilla extract.
Mixt it really well. Now switch on the flame to low and stir well.
It will start to thicken quickly. The mixture will turn thick, smooth and creamy. That's your cue to switch off the flame.
Pour the mixture into a greased mould.
Let it cool down and refrigerate for 2-3 hours.
If you want to make it vegan:
- The best choice of milk is almond milk.
firstly boil the carrots in water until cooked.
once cooled strain the carrots add in the almond milk and carrots into a blender.
blend until smooth.
In a saucepan add the sugar. Skip milk powder for vegan option.
continue the same methods from step 8. Rest of the steps are the same.
